In a large slow cooker, mix together:
2 cups chicken broth
2 cup diced onion
2 tablespoons chopped cilantro
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon granulated garlic
1/2 teaspoon cayenne pepper
and add 2 boneless chicken breast halves
Heat for 4-6 hours, or until chicken pulls apart. Shred, salt to taste and add a squeeze of lime.
Build chimichangas, roll up, and deep fry for a few minutes. Drain on paper towel and serve!
