Greetings! We are preparing to make some baked teriyaki and sesame honey wings and I thought there might be some of you who don’t know how to cut up chicken wings for hot wings. So I am going to share with you how I do it.
I buy my wings in large, family size packages of whole wings. That means that the drumette and the flat wing portion as well as the wing tips have not been cut up for you. This makes the wings cheaper in the long run because you need to do it yourself. We are talking about half as cheap as if you bought them already cut up. So when I can get whole wings for around 49 cents a pound as opposed to a dollar a pound, then I am going to have to cut them up myself.
It really doesn’t take that long and you don’t need a cleaving degree to do it. Cleaving is what they call butchering in the trade. So all you need really, is a good sharp knife that fits well in your hand and that you are comfortable with. Not a paring knife, and not a filet knife and not a boning knife and not a carving knife. A utility knife or a butcher knife, if you are comfortable with one is perfect.
First you need to cut off the wing tips because they are not good, they have no meat and they burn quickly. So hack those off and put them in a bag and freeze them for the next time you make stock. Next you will want to release the flap of skin that is between the drumette and the flat portion of the wing. Just run your knife down between there and loosen it. Then take the wing in both hands and snap it back on itself so you can pop that joint open, allowing you to then easily run your knife blade down between the cartilage and the bone, separating the two pieces. Easy! Now you have the two edible pieces of the wing separated for your enjoyment!
Now you can make your wings any way you like, baked, fried, sauced, breaded, you name it! We will be making Teriyaki and sesame honey wings so make sure and stay tuned for videos showing you how we do that!
