Greetings! Today I tried my hand at these soft jumbo pretzels and pretzel bites. I have to tell you, these are out of this world! Perfect for a game day snack or just for anytime. These would be great alongside a bowl of hearty soup or split in half to use as a sandwich roll. Can’t you just imagine a Ruben sandwich made with this as the bread?
This is your typical soft pretzel chewy, and soft on the inside and crunchy and brown on the outside. The secret to making delicious pretzels at home is the simmering baking soda bath,which gives the dough an alkali bath which in turn allows the crust to turn an amazing brown color during the baking process. I have seen lots and lots of recipes which call for a little bit of water and a little bit of baking soda. My Nanny, my German grandmother made these with a lot more water and a lot more baking soda. I believe that is the true secret to the perfect pretzel.
You can sprinkle these with salt or you can bake them, dip them in melted butter and roll them in a mixture of cinnamon sugar if you like. We opted for the salt and dipped in a variety of mustards that we had stowed in the fridge. These were the perfect Sunday afternoon snack and we will definitely be making these again soon!
