Greetings! Today I am sharing the fabulous Adobo chicken fajitas that we had for dinner last weekend! This chicken was succulent and super flavorful! The marinade was perfect and quick to put together. Rick threw these on the grill and cooked them to perfection. We sliced them up and made fajitas the easy way!
Adobo is a traditional seasoning blend that can be found in the latin food section of your market. You can make your own or you can add a bit of the commercial blend right to your marinade. I find that it has a copious amount of salt in it so I usually just go with what I can reach. Onion, hot peppers, chili powder, cumin, oregano, paprika and salt. A splash of vinegar and a squeeze of lemon or lime juice is all you need to make a great marinade along with some olive oil.
I allowed mine to marinate for a good four hours before Rick cooked them, but you can feel free to go as long as overnight. Any longer and the meat will start to cook from the acid in the marinade. That will make for unpleasant texture to your meat.
I hope you give this a try. This is perfect for those hot summer evenings when cooking inside is just unbearable. These can sit in the fridge till you want to eat and then cook them quickly outside. Wrap everything up in a warm tortilla and add in your favorite fixings. We had homemade guacamole, cheddar cheese, sour cream and fire roasted peppers and onions. Perfection! Add an icy cold cervesa and you are all set!
