A classic Caribbean way of making split peas with salted pigtails soup, using a recipe from Trinidad and Tobago. Tender pieces of salted pigtails are used to flavor this split peas soup along with coconut milk, fresh thyme and scallions and you can add potatoes and other ground provisions if you like. A rich, thick and flavorful soup which is commonly made throughout the Caribbean.
You’ll Need…
2 cups yellow split peas
2 lbs salted pig tails
1/4 teaspoon black pepper
1 scotch bonnet pepper
1 tablespoon veg oil
1 large onion
4 sprigs thyme
4 large potatoes
3-4 cups coconut milk
6-8 cups water
2 scallions
4 cloves garlic
1 cup flour + water for dumplings
