Gingerbread cookies ( biscotti di pan di zenzero ) recipe

During these cold holidays, there is nothing better to keep warm than a steamy cup of tea, maybe with some gingerbread cookies… what about making them together?
A typical feature of these cookies is their shape, which reminds us of Christmas, and the most famous shape is of course the gingerbread man. Let’s see what ingredients we’ll need to make these beautiful cookies:
• 2 ¾ cups (350 g) of flour / ½ cup (150 g) of honey
• 2 level tsp of cinnamon powder
• 2 level tsp of ginger powder
• Salt / ½ tsp of clove powder
• ¼ tsp of nutmeg powder
• 1 tsp of baking soda • 5,3 oz (150 g) of butter / 1 ¼ cups (160 g) of sugar
and
• 1 egg
While for frosting we’ll have:
• 1 egg white
• Some food dyes, either in powder or liquid form
• 1 2/3 cups (200 g) of powdered sugar
Let’s prepare the gingerbread cookies:
In a large bowl I’ve put the flour, the sugar and the diced butter. Now add the rest of the ingredients and knead everything until you get a smooth and homogeneous mixture, then wrap it in cling film and place it in the fridge (to rest) for at least 2-3 hours.
2-3 hours — fridge
Take the dough and roll it out to 1/5 to 1/6-inch thick, then cut it into your desired shapes with cookie cutters. Lay them on a baking pan lined with parchment paper and bake at 350°F for 10-15 minutes.
10-15 min. — 350°F (180°C)
Once the cookies are cold, we can move on to frosting: beat the egg white until stiff with the powdered sugar, divide the mixture into small bowls and colour each one with different food dye colours. Pour the mixture into parchment paper cones and decorate the cookies as you like.
