Mexican Enchilada Meatloaf Recipe
Ingredients:
½ lb grass fed ground beef
½ lb ground turkey thighs
⅓ cup cheddar cheese, grated
Handful of tortilla chips, I used the brand Siete
⅓ cup Rockin Robins enchilada sauce, gluten free or regular
½ yellow onion, super fine dice
½ organic bell pepper, yellow or red, super fine dice
1 egg, pasture raised
1 Tbsp. Rockin Robin’s Taco seasoning
⅓ cup cremini mushrooms, super fine dice.
Directions:
Preheat oven to 350 degrees F.
Place the ground beef and turkey into a medium size mixing bowl and add the taco seasoning, mushrooms, onions, and bell peppers. Mix the ingredients with clean hands until slightly mixed.
Add the cheese and the tortilla chips by breaking them into small pieces with your hand. Mix that in a little to distribute.
In a small bowl add the egg and scramble with a whisk or fork. Pour the egg and enchilada sauce into the meatloaf and combine with your hand until the egg looks mixed in.
Pour the meatloaf into a 9 x 5 inch loaf pan and press it in. You don’t have to grease or spray the pan. Add just a little more enchilada sauce to the top of the meatloaf and spread it with a spoon. You want a thin layer.
Place in the oven at 350 degrees F. for 40 minutes. Use an instant read thermometer to check the internal temperature. You are looking for 165 degrees F. I ended up cooking my meatloaf for 50 minutes. Ovens vary.
Serve this with spanish rice and refried beans.
Bonus Recipe: Cheesy Nachos
You will probably have some leftover enchilada sauce which means you will have an opportunity to make some delicious nachos while you are waiting for your meatloaf to cook.
Simply place some tortilla chips in an oven proof dish. Drizzle enchilada sauce over the chips and top with shredded cheddar cheese. Place in the oven alongside your meatloaf for about 10 minutes or until the cheese has melted and is slightly bubbly.
You can top with sour cream and avocado/guacamole for some amazing cheesy nachos!
