Greetings! I have been asked to present a series of recipes that would be easy and appropriate for a Thanksgiving for 2. I am doing this in conjunction with the Today’s Modern Family Website!
The premise of this series is when families have to send children for ordered visitation during the holidays, those Moms and Dads left behind may not feel like celebrating and may, in fact, wallow in self pity. We don’t want that. We want you to look forward to the holidays even though you may be separated from your kids. You deserve to celebrate and have a memorable Thanksgiving meal.
Even though as Mothers and Fathers we define ourselves by our children, we are not in fact defined by them. They are a very special part of our lives. They are what we focus on during their time at home, however, there will come a time when we will let them go into the world and they will have their own families. We must remember that the holidays are important regardless of who we are with. Even if we are alone, we must mark those milestones throughout the year and make our own memories.
I have decided to share with you an alternative to the traditional turkey dinner. Ham is on sale in many places right now and it is a lovely option if you don’t want to cook a bird of any type. Face it, some people just don’t like turkey! Sometimes the Thanksgiving meal can get tired and boring, having the same thing year after year, while it may be tradition, it can just be blech. So let’s make a ham!
I am going to make my ham in the Crock pot and make a glaze with ingredients I had on hand. I pulle out a can of pineapple chunks and a can of mandarin oranges and some brown sugar and ground cloves. This ham turned out amazing!
Now as for the Thanksgiving for two part. Yes it is a whole ham. But eat what you like, save some for sandwiches or breakfast and freeze the rest in portion sized packages. Keep the bone to make a great bean soup in January and you are set. Ham is so cheap right now it is almost a crime not to cook one.
