Greetings! Mondays are always crazy aren’t they? That doesn’t change when it comes to dinner time. Getting back into the swing of a busy work week and school schedule can sometimes make us run to the drive through! I admit, sometimes it is simply easier to go get subs and call it good. But we are trying to change that habit.
Tonight I have some cube steaks that I thawed and I have some leftover bacon cheese mashed potatoes from Friday night dinner. Instead of simply heating those potatoes up I am going to make something my mom used to make, potato patties!
These are really simple and they make a lovely side dish to go along with a grilled or in my case broiled piece of meat. I had simply placed my cube steaks on a baking pan and sprinkled them with my top secret seasoning and stuck them under the broiler for about 10 minutes. Then I turned off the broiler and let them stay in the oven until everything else was ready.
I mixed up the potatoes with a couple eggs and a bit of flour and make a thick batter. I scooped the mixture by 1/4 cup scoops into a skillet that I heated with about 1/4 cup sunflower oil. I did not add any additional oil during the cooking process.
We got about 15 patties out of the leftover potatoes I had which I would estimate were about 4 cups worth.
