Hi everyone, I’m Sonia. Today we’re out here to prepare a great summer recipe: steak tartar. An internationally known dish on menus through the world that’s main ingredient is raw meat. Let’s see what we’ll need to make it.
• 5 tbsp of chopped parsley
• 5 tbsp of chopped red onion
• 3 lemons
• 4 fresh eggs (you’ll only need the yolks)
• 21 oz of beef fillet • 4 tbsp of extra virgin olive oil
• 5 tsp of pickled capers
• 5 tsp of mustard
• 4 tsp of Worcester sauce
• Salt and pepper
Let’s make our steak tartar.
From the three lemons cut 16 slices which you’ll use for decoration and juice the lemons to get 4 tbsp of juice. Then chop the capers, parsley and onion. Dice the meat very finely. If you can grind the meat, that’s preferred, but cut like this will be fine. I’ll show you how it’s done. First of all trim the fillets well and then cut the fillet into very thin slices. Then cut the slices into thin strips, and after that cut the strips into small cubes.
In a bowl mix the meat, the Worcester sauce, the lemon juice, oil, salt and pepper. Then add a tsp of mustard, a tsp of chopped capers, a tsp of chopped onion and a tsp of chopped parsley. The rest of these ingredients will be used to garnish the dish at the end. Now mix everything together well.
To plate the dish, you’ll need to divide the meat into 4 portions, form a circular mound and then press an indentation into the centre. Into this put an egg yolk. These should be extremely fresh.
