Summer is in full swing and with July come peaches. In our part of the country, sweet, delicious peaches and other stone fruits will make their way from farms to farm stands and grocery stores. We have local orchards where you can “pick your own” and local stores will feature sweet South Carolina peaches for a few weeks when they are at their peak. Today I am sharing how I make delicious, old fashioned sweet cream shortcake biscuits for peach, berry and other fresh fruit desserts. So easy you won’t want to miss out on these!
I must preface this recipe with a warning. These are not biscuits like you think of biscuits. These are really cakey biscuits that will lend themselves to being served either alone or with fresh, sugared fruits during their time, in season, this summer. These are very reminiscent of a whoopie pie shell or cake. They are tender, light and flaky and have a bit of sweetness. They go great with a cup of coffee or with a tall glass of iced tea but these are amazing when paired with peaches, berries or other summer fruits.
These start out like a biscuit, flour and dry ingredients are cut with butter then milk and cream and flavorings are added. These do not rise like a regular biscuit so don’t be alarmed. What you will get is a cross between a biscuit and a cake. Perfect for plopping in a bowl with a healthy serving of sweetened whipped cream and a handful of berries. These really help the fruit to be the star of the show.
These are very much like the “cakes” that my grandmother used to make when I was small. Soft and lightly sweet these could be a vehicle for a number of desserts. These are easy to whip up and you can make them in advance by a couple of days and store them in an airtight container.
I think these would be perfect for a shortcake bar for your next get together or potluck. Everyone can build their own and you could even sandwich ice cream in between if you were so inclined!
