Hi everyone and welcome to the giallozafferano kitchen! Are you looking for a tempting Valentine’s Day dinner idea? All right, let’s make together the sweetheart risotto: it’s a simple and refined shrimp risotto, to tempt your sweetheart with. But let’s see together what ingredients we’ll need to make it:
For the risotto:
• 1 pint (½ lt) of fish stock
• 1 glass of dry white wine / ½ onion
• 2 tbsp of extra virgin olive oil
• less than 1 cup (160 g) of rice / 2 tsp (10 g) of butter
• 1 pinch of salt
• 1 pinch of chilli powder For the shrimp sauce:
• 2/3 lb (300 g) of shelled shrimps
• 4 tbsp of tomato paste
• 1 shot of brandy
• 2 tbsp of extra virgin olive oil
• salt / ½ onion / 1 knob of butter
• 2 thyme sprigs
• just under ½ cup (100 ml) of heavy cream
Let’s make together the sweetheart risotto:
First of all, in a saucepan, sauté the onion and the thyme in butter and olive oil, until soft. After about 10 minutes on a very low flame, add the shrimps… brown for a couple of minutes, then add the shot of brandy.
When the brandy has completely evaporated, add the tomato paste… the heavy cream… and salt to taste. Cook for a couple of minutes, after that turn off the heat, since the sauce is ready.
In another pan, put 2 tablespoons of olive oil and half chopped onion: sauté on a very low flame for at least 10 minutes. Now add the rice, let it toast for a minute… stirring well… then pour in the white wine. Let it evaporate completely, after that add the fish stock little by little, until the rice is cooked.
2-3 minutes before the rice is cooked, add the chilli powder… and the shrimp sauce. Now finish cooking the rice, after that, cream with the remaining butter.
