How to Make Italian Nachos ~ Super Bowl Snacks~ Old Chicago Pizza Copycat ~ Noreen’s Kitchen

I promised we would use those pasta chips in something soon and today is the day! These Italian nachos are inspired by the same dish from the Old Chicago Pizzeria. Rick and I have visited there twice in Jacksonville, NC. We loved these nachos so much we knew we had to give them a try at home. While my pasta chips may differ from theirs, we tried to make these as close to the restaurant version as possible. I think we came pretty darn close!

If you don’t want to fry up your own pasta chips you can always try to find the commercially made version in the snack section of your better grocer. I could not find them in my area this time, so we fried up our own using egg roll wraps. You can see that video here: http://bit.ly/2rNEVAb.

These went together quick and they were amazing. I started out with a half sheet pan which I lined with foil. Just to make clean up easier. I placed a ramekin in the center that would later be used to hold pizza sauce for dipping. That will not stay here for baking. I arranged the first layer of chips around the pan and then sprinkled with mozzarella cheese, topped with crumbled Italian sausage and mini pepperoni. You can use regular size pepperoni or the hard kind that can be cut into chunks. Your choice! I added another layer of chips, sausage and pepperoni then sprinkled over some sliced pepperoncini. These add a wonderful zing to the nachos that really completes the awesome bite. I topped everything off with even more Mozzarella as well as some freshly grated Parmesan cheese.

I removed the ramekin from the center and popped the nachos into a 350 degree oven for just around 10 minutes or until the cheese was melted but not brown. Then these are ready to enjoy! Add the ramekin back to the center, filled with your favorite pizza sauce and everyone can dig in!

We served these as our main meal for dinner on the night we made them and they were delicious. Albeit, they were about twice as many as our family could enjoy and they don’t really save very well. Next time we will make way less for ourselves.

These Italian nachos would be the perfect game day centerpiece for your party buffet! I think that these would be great either served the way we have or without the toppings and let everyone top their own with sausage, pepperoni, peppers, onion,s sauteed mushrooms or any other favorite pizza topping. Like a regular nacho bar, but switched up like this to be Italian!

If you are hosting a super bowl football party these would be a great snack option. These Italian nachos are the perfect party food! They feed a crowd cheap and easy and they are simple to put together with ingredients that are easy to find.
