Easter’s on it’s Way! Pineapple Bake

Greetings! On to another side dish to go with our Easter ham (coming soon) This one is right out of my mom’s recipe box. She got it from a church cookbook that was published by the Columbus United Methodist Church in Columbus New Jersey. That’s where I lived when I was a kid! So this is a delightful eggy, custardy, french toasty dish that is perfect with the saltiness of the ham and the richness of the baked beans. This is a holiday side that our family has often enjoyed only on Easter.

Isn’t funny how we have certain foods that we only have for certain meals? We usually only have cranberries with Thanksgiving or Christmas dinner or certain things on the 4th of July or in this case, Pineapple Bake for Easter.

This is a super simple recipe that you can make, most likely with ingredients that you already have on hand, pineapple, eggs, butter, day old bread some sugar and some marshmallows (we always have them in the house, they are Sissy’s favorite snack) and you are good to go.
