Roasted Olives and Roasted Garlic Recipe!! Noreen’s Kitchen

Greetings! Here we are with another couple of components to our Antipasto Platter for Christmas Eve dinner.

Roasted Olives and Roasted Garlic are always an addition to my platter. I began making these olives several years ago when I wanted to do something different with what I had on hand. You would not believe how delicious these olives are and you probably have what you need sitting in your pantry! I’ll bet some of you never thought to use the olives other than popping open the can and putting them in a bowl. Olives are for more than putting on our fingers ; ).

The roasted garlic is an amazing condiment to have on hand for anytime! Roasting off a few heads and keeping them in the fridge for almost anytime you want to add rich caramelized garlic flavor to your dishes. Simple and delicious! Just slice the tops off of a few heads of garlic, bunch up in some heavy duty aluminum foil, drizzle with a healthy dose of olive oil, a sprinkle of salt and wrap it up tight. Roast in a 350 degree oven for an hour to an hour and a half and you are ready to go to garlic heaven! If you want, pot them out of their skins and put them in a jar, cover them with olive oil and use them as you wish. They will keep a very long time, but you will use them all the time. So be ready to make these often!

The olives are equally as easy! Pop open and drain, add a can’s worth or a small jar of green olives that have been drained, put them in some scrunched up aluminum foil, add a head of peeled garlic cloves (about 15 or 20). Season with a little salt, pepper, oregano, thyme and rosemary and pour over 2 or 3 tablespoons of good olive oil. Wrap and seal up tight, and bake next to that garlic for the same amount of time. An hour to an hour and a half should be perfect! Serve these warm or at room temperature. If you want to make these ahead of time, just let them cool and put them in an airtight container in the fridge. When you are ready to serve them, just take them out and allow them to come to room temp. or if you don’t have time to do that, just pop them in the microwave on 40% power for about 1 minute and you should be good to go.
