Onion and Bacon Soup | Everyday Food with Sarah Carey

Two of my favorite foods are cheese and bacon, and both are combined in the soup I’m going to make for you today. What, you love cheese and bacon, too? Then try our take on a classic French onion soup, with the addition of bacon to make it heartier and that much tastier. But it still has the hallmarks of the classic: luscious caramelized onions and bubbling Gruyere-topped baguette slices sitting on top. What a way to warm up a cool night.

Sarah’s Tip of the Day:
It does take a little time to get this soup right. They key to those deep-golden-brown caramelized onions is cooking them long and low. Watch the video and I’ll clue you in on how to adjust the heat and tell you the best pot to use to get the darkest caramelization possible. I’ll also let you know the best time to season the soup (it’s not when you think). Enjoy!
