Boricua style Chicharron de Pollo (Fried chicken)

Welcome back! Today’s episode is Arroz blanco, habichuelas guisadas yboricua style chicharron de pollo (White rice, stewed beans and fried chicken chunks).

Habichuelas guisadas is another staple in Puerto Rican cooking. Technically rice and beans is a meal, the carb is the rice and the beans the protein. Some consider rice and beans as a side dish, always together. Chicharron de pollo (fried chicken chunks) are cut up chicken pieces seasoned, floured and fried. Chicharron de pollo is usually served with mofongo.
For the stewed beans you will need:
2 cans of beans (any excepct black beans)
1 envelope sazon Knorr with Culantro y Achiote
1 envelope Goya Ham seasoning
1 teaspoon oregano and cumin
1 cup of peeled pumpkin or squash
1/4 cup olives with pimentos
1 small diced potato
3 tablespoons sofrito (or 3 frozen cubes)
2 tablespoons olive oil
1 8oz can tomato sauce
Handful fresh cilantro
For the chicharron de pollo or fried chicken chunks you will need:
Chicken parts ( I cut up 3 large breasts) cut up in chunks
All purpose flour
Adobo Goya
Paprika
