This classic chorizo stew hails from the Rioja region of Spain. It’s a rustic and warming dish full of simple but bold flavours.

If you can’t find dried red peppers, the pimientos choriceros used in this dish, no worries. Simply use any dried red peppers you can find, or roasted red peppers from a jar. While the flavour might not be exactly the same, you’ll still end up with a winning dish!
