How to make ceviche

Ceviche is a no-cook combination of fish and seafood, perfect as a make-ahead starter for your next Mexican or Latin American inspired dinner party. Healthy, fresh and delicious, ceviche can be served on its own or with a side of tortilla chips.

The seafood is actually cooked by the acid in the ceviche, usually a combination of fresh citrus juices such as lemon, orange or lime. There are loads of ceviche recipes out there, but here your choice of whitefish is combined with mango, chilli, spring onion, tomato and coriander for a ceviche that’s easy to make and full of flavour.
