Cacik, Tzatziki or Khyar Mah Laban is a very refreshing cucumber yogurt mint salad or dip. It’s perfect for summer time because it’s very refreshing, or you can use it as a dip for parties and dip pita bread, or pita chips in and snack. It’s so yummy! And it’s very easy and quick to make.
Recipe below:
5 Pickling Cucumbers (substitute English or Persian Cucumbers)
16 oz Greek Yogurt (substitute Lebneh or Yogurt Cheese)
4 Cloves Garlic (finely chopped w/ mortar and pestle – made into paste – no chunks)
1 Teaspoon Kosher Salt (but feel free to decrease or increase to taste)
1.5 Teaspoon Dried Crushed Mint

Start out by peeling the cucumbers, you can leave traces of the skin but most of it needs to come off because the skin is a bit tough. Then you finely chop the cucumbers and put them into a bowl. If you want you can grate the cucumbers as well but this time we’re taking the chopped route but grating works just fine.
Next peel the 4 cloves of garlic and place them into a mortar and pestle along with all the kosher salt. We’re using a wooden mortar and pestle but you can use any kind. You can also use a blender as long as the garlic becomes into a very finely chop or a paste. We do not want any large bits or pieces or chunks of garlic in our yogurt cucumber salad. If that happens you’ll be caught off guard with the strong flavor of the garlic. So make it into a paste consistency so it blends perfectly into the salad.
Next up mix the Greek yogurt (or lebne or yogurt cheese) and the garlic/salt paste into a bowl together. Mix it finely so that the garlic and salt it blends throughout all of the yogurt. Then add the garlic/yogurt into your cucumber. Add the crushed dried mint on top and blend it all together. Once it’s mixed well you can spread it out on a large plate. Chop up several fresh mint leaves and sprinkle it on top of the Tzaziki/Cacik/Khyar Mah Liban and serve.
