Meat Filled Pancakes (Russian)

Mmm whats on the menu today? Russian pancakes with delicious meaty filling topped with fresh sour cream. Yum Yum! This dish is so simple, yet so tasty and can last you few weeks, so it saves you cooking time in the future. I will be making my pancakes from scratch, and then freezing them for future dinners or lunches. They are perfect for breakfast meal and kids love these. This recipe makes 10 pancakes. Blini, or pancakes, are an essential feature of Russian cuisine. Served with melted butter, sour cream, berry jam, honey, or the most luxurious option – caviar, they are made and eaten in gigantic batches during the Maslenitsa week that precedes the Lent. But they are as well eaten all year round – sweet or savoury toppings and fillings change with the seasons. For me, Blini symbolize all the warmth and coziness of home.

For this recipe we will need:

Plain pancakes:
300 gr of flour
500 ml of milk
2 eggs
Salt & Pepper

For the meaty filling we will need:
400 gr of beef mince ( you can use pork as well, or do half pork, half beef)
1 onion
4 cloves of garlic.
Salt & Pepper

To make these yummy Russian pancakes with meat you will need to do the following:
Step 1 : Mix flour, milk, eggs, salt & pepper together ( If you have a blender, use that, will be much quicker)
Step 2 : Fry pancakes lightly one by one and place them on a plate to cool down
Step 3: Make the meat filling. Cut onion and garlic into small pieces and fry in the pan with some butter. Add meat and spices, mix well.
Step 4 : Spoon the mixture ( about 2 tbs ) into each pancake, and fold together from both sides.
Step 5 : Fry them until golden brown on a frying pan to serve or store them in a freezer for the future.
