Arroz Con Gandules – Yellow Rice with Pigeon Peas

Oil
Sofrito
5 cups rice
6 cups water
2 packet sazón
Adobo
Black Pepper
Fancy Pimientos are naturally sweetened, roasted red peppers.
1 can Pigeon Peas/Gandules (drained and rinsed)
1 Can of tomato sauce

Preparation:

1. Heat oil in a 6-quart pot.
Saute the beans, sofrito, Sazón, gandules, Adobo seasoning
Black Pepper, tomato sauce and Fancy Pimientos for 2 minute.

2. Add the rice and water

3. Bring to a boil. Let boil for 5 to 7 minutes.

4. Turn, Cover, reduce heat to medium low, and cook for 35 to 40 minutes.

Tip: Do not use a lid with a vent that allows the steam to escape. Never lift the lid while cooking.

5. When finished cooking, stir the rice before serving. It should be light and fluffy.

Servings: 4 to 6 people.
