Dashi is a basic broth of fish or vegetables. It is an important component when cooking Japanese food.  Dashi is packed with savory umami, and it becomes the base flavor of a lot of Japanese dishes.

In this video, we will show you how to make Dashi with different ingredients:
1. Katsuo/Katsuobushi (dried bonito flakes)
2. Kombu (dried sea kelp)
3. Niboshi (dried sardine)
4. Shiitake Mushroom
5. Instant dashi

//Ingredients
*Katsuo Dashi
2 cups (480 ml) water
1 handful of Katsuo dried bonito flakes

*Kombu Dashi
2 cups (480 ml) water
8 g Kombu dried sea kelp

*Niboshi Dashi
2 cups (480 ml) water
15 g Niboshi dried sardines

*Shiitake Mushroom Dashi
2 cups (480 ml) water
25 g dried Shiitake mushrooms
