Blueberry Cheesecake is a delicious baked dessert that is very easy to prepare, but very impressive. A cookie crumb base is topped with a rich mixture of cream cheese, lemon, cream and eggs. Blueberries are swirled through and the cheesecake is baked until just firm. Chilled then topped with more blueberries, this gorgeous dessert is perfect for parties – give it a go!

375g of Cream Cheese (at room temperature)
200g Packet of Plain Sweet Cookies (I used Scotch Finger Biscuits)
80g of Butter
3/4 Cup of Whipping Cream (I used “Thickened Cream”)
3/4 Cup of Caster Sugar (aka Super Fine White Sugar)
1 Tablespoon of Grated Lemon Zest
2 Tablespoons of Lemon Juice
1 Teaspoon of Vanilla Extract
3 Eggs
1 1/2 Cups of Blueberries (plus extra for decorating)
2 Tablespoons of Icing Sugar (for dusting)
