Today I have a treat and a little something fun! How to make an authentic Chicago style hot dogs! Thanks to the good folks at Vienna Beef who sent me this kit to make 10 amazing Chicago style dogs so I could show you how it’s done! There is nothing quite like a real Chicago style hot dog. Loaded with flavor and the perfect natural casing sausage that snaps when you bite into it! This is the next best thing to getting one at Wrigley field!

According to the Vienna beef website the origins of the “original Chicago style hot dog” go something like this:

Money was scarce, but business was booming for these entrepreneurs who offered a delicious hot meal on a bun for only a nickel. The famous Chicago Style Hot Dog was born!

They’d start with a Vienna Beef hot dog, nestle it in a steamed poppy seed bun, and cover it with a wonderful combination of toppings: yellow mustard, bright green relish, fresh chopped onions, juicy red tomato wedges, a kosher-style pickle spear, a couple of spicy sport peppers and finally, a dash of celery salt.

This unique hot dog creation with a “salad on top” and its memorable interplay of hot and cold, crisp and soft, sharp and smooth, became America’s original fast food and a true Chicago institution.

A salad on top is right! I had never had one of these beauties until I was in my late 20’s in of all places, Williams, Arizona at a hot dog restaurant called The Hot Dog Corral. This place is no longer there, but the memories are strong. They sold a variety of different hot dogs made to order. When I saw the Chicago I knew I had to try it. From that moment I was hooked. The snap of the dog, the freshness of the veggies and don’t forget that atomic green relish that is always present on one of these delicious masterpieces.

I wanted to share how to do this the right way and when I could not find the proper ingredients to build this work of art, I emailed Vienna Beef and asked them if they would share. They were very gracious and I was excited so thanks to them for partnering with me to make this video happen!

Vienna beef also has it’s roots in Chicago and was the first to introduce the hot dog at the 1893 Worlds Fair and exposition in Chicago! According to their website:

The hot dog was introduced to Chicago on 1893 when Vienna beef debut there said the world’s Colombian exhibition in Chicago. It was a hit and the next year Vienna opened its first store on Chicago’s near west side. Demand became so strong that Vienna started selling its products to other stores and restaurants around the city. An ethnically diverse Chicago. Vendors began to add ingredients to the traditional hot dog to help them sell. German vendors added mustard and dill pickles relish. Sport peppers which combined to make a sort of Gardinera came from the Italians. Vendors on Maxwell Street started turning their produce cards into hot dog carts with the Greeks and Italians adding tomatoes and onions. By the 1950s Vienna beef franks dragged through the garden could be found all over Chicagoland. Hot dog stands have become an iconic part of Chicago’s identity almost every neighborhood and suburb has its shop. In Chicago our hot dog start with one Thing, beef! 120 years after debuting at the World’s Fair Vienna beef is still the foundation of the iconic Chicago-style hot dog.
