Chicken & Dumplings From Scratch

Delicious Chicken & Dumplings. Made from scratch and so easy!

Place your raw chicken with the skin in a large pot with enough water to cover by 3 inches. Season the water with salt, pepper, 1 large onion roughly chopped and about 1/8 tsp. of cayenne pepper. Add 5 or 6 roughly chopped carrots to the broth.
When chicken is cooked remove from broth, set aside to cool enough to handle. Remove the skin and shred it to desired size. Set aside.
Dumplings
3 cups ap flour
2 tsp salt
a little less than 1/2 cup solid shortening
Mix those 3 ingredients together and add enough cool water until it comes together.
On a heavily floured surface, place the dough and sprinkle flour on top. Pat down. Then roll to about 1/4 inch thick. Cut in squares with a knife or pizza cutter. Place the cut squares in the boiling broth one by one and stir. Cover the pot. Reduce the burner so the broth is a medium simmer & let it simmer 20 to 25 minutes. Add the shredded chicken back in about 5 minutes before the dumplings are done. Enjoy!
