This Southwest chipotle sauce recipe uses chipotles en adobo, a specialty product found in the Mexican food aisle of your supermarket. Although you can use chipotle sauce for fish tacos, it’s also great on sandwiches, wraps and as a spicy dip for artichokes. This chipotle sauce uses roasted garlic as its base, and is basically a spiced up roasted garlic aioli recipe.
1 cup mayonnaise
1-2 teaspoons minced chipotle peppers
1-4 teaspoons of adobo sauce from the chipotles
1 head roasted garlic cloves
1/2 teaspoon kosher salt
