Today we’ll be making together the cupcakes, the popular American small cakes: I’ll show you how to prepare the basic cupcake batter, that, once baked, can be topped and decorated in a number of ways. Let’s see what ingredients we’ll need:
• 1 cup (120 g) of flour
• 2 medium eggs
• 1/8 tsp (1 sachet) of vanilla powder or 1 tsp of vanilla extract
• ½ tsp (2 g) of baking powder • just over ½ cup (120 g) of sugar
• 1 stick (120 g) of butter
• the grated zest of ½ organic lemon
• 1 pinch of salt
Let’s make together the cupcakes:
Put the softened butter in a bowl, then add the sugar and the vanilla… and keep beating until you have a smooth, even and foamy mixture.
When the mixture is foamy, add the grated lemon zest and the salt; now add the eggs at room temperature, one at a time, and keep beating until creamy.
Now add the sifted flour and baking powder, mix well with a wooden spoon and the cupcake batter is ready.
Place 12 paper baking cups in a cupcake pan, and divide the batter. Now, bake in a static oven at 350°F (180°C) for about 20 minutes.
20 min. – 350°F (180°C)
Once the cupcakes are cooked, take them out of the oven and let them cool completely. Then, they’re ready to be decorated with buttercream, cheese or with a plain frosting.
