Today we are in a traditional Bavarian café, in Milan, to get into the mood for the Oktoberfest. We can’t fail to make a recipe using the main ingredient of German cuisine, that’s why I’ve decided to cook together: the currywurst! Let’s see how to do. We’ll need:
• 4 weisswurst the local Bavarian veal sausages
• 1 tbsp of yellow curry
• 1 cup (250 g) of tomato sauce
• 1 cup (250 g) of ketchup
• 1 small white onion • 1 tsp of paprika
• 4 tsp of yellow curry
• 1 tsp of cumin
• 2 tbsp of extra virgin olive oil
• 1 glass of water
• salt to taste
Begin by making the curry sauce to top the sausage: finely chop the onion… brown in 2 tablespoons of oil… and add the paprika.
What I’m going to do now, would be forbidden in Italy: combine the tomato sauce… and the ketchup… and let simmer for a few minutes. If the sauce is too thick, you can add a glass of hot water.
Before turning off the heat, add the cumin… and the curry… be generous… or you can’t call it currywurst anymore!
Process the sauce until smooth, then keep aside and take the sausages: bring a pot of water to a boil, adding a teaspoon of curry. Now put in the sausages… and let them boil for 5 minutes.
Once cooked, grill quickly on a hot grill pan, to make them crispy on the outside.
Cut the sausages into ½-inch thick slices… spoon over plenty of sauce… sprinkle some curry… and, as a final touch… a handful of French fries… or to say better, kartoffeln!
