Dennis’s Savory Quiche Muffins for Mother’s Day

These savory quiche muffins come from my neighbor Dennis. They are very easy to make and are delicious. They are colorful and full of veggies, bacon and cheese. Very, very nice.

Makes six large muffins
1 large six muffin tin (Texas muffin tin)
6 slices of white, wholegrain or whole wheat bread without the crust
¾ cup of grated cheddar or Colby or your favorite cheese
4 slices of bacon — cut into small pieces
1 large celery stalk — sliced
¼ cup small dice green bell pepper (capsicum)
¼ cup small dice red bell pepper (capsicum)
½ cup chopped tomatoes
¼ cup finely diced red onion
8 large eggs
Cayenne — optional

Spray the muffin tin with spray oil and heat the oven to 375 degrees F (190 C).
Place the eggs in a bowl and add the bacon, celery, bell pepper, tomatoes and onion. Mix well. Add half of the cheese and some cayenne if using. Mix again.
Place a slice of bread into each muffin cup. Press it down so it folds up the sides but be careful not to break it. Spoon the egg mixture on top of each bread slice and top with the remaining cheese.
Place the muffins in the oven and bake for about 20 minutes until they are fully cooked, browned and the cheese is completely melted.
Run a knife on the sides of the molds and remove each muffin carefully. Enjoy with some sour cream if you like.
