Dessert fruit pizza recipe & equipment:
Shortbread Crust:
• ¾ cup butter
• ½ cup icing sugar
• 1 cup flour
• ¼ teaspoon baking powder
• ⅛ teaspoon salt
Cream butter and sugar together until light and fluffy. Gradually add flour, baking powder and salt and continue to mix until all ingredients are incorporated. You can do this with a stand mixer, hand mixer, or by using a wooden spoon.
Bake in an 8″ round pan at 325F for 40-45mins. You can also use a pizza pan, or on a cookie sheet. Arrange the dough like a pizza crust- flat with rounded edges. When the shortbread crust is golden brown it is ready to be removed from the oven. Allow it to cool completely before frosting.
Toppings:
• 4 oz cream cheese
• 1/2 cup butter
• cinnamon sugar
• fresh fruit
Cream cream cheese and butter together until smooth.
Spread cream cheese mixture evenly over top of crust using a knife or an offset spatula and sprinkle with cinnamon sugar.
For the fruit toppings you can use any assortment of fruit you like, such as oranges, kiwi, strawberries, raspberries, blueberries. The more colourful, the better! Arrange chopped fruit as desired and enjoy eating your fruit pizza.
Slice and serve immediately.
