When I have guests over I like to take care of every detail, for Christmas dinner I’ll even offer homemade bread: delicious dinner rolls enriched with various ingredients. Come with me, I’ll show you how to do!
Begin with the bread dough, and put the flour in a stand mixer; now put the malt in a small bowl, if you don’t have malt, add 2 teaspoons of sugar… a little lukewarm water, not all the water since we need it to dissolve the salt… and dissolve the malt, add the crumbled yeast… and dissolve it, too. Dissolve the salt in the remaining water, since it must be added to the flour separately, and pour in the oil… now beat at low speed, and add first the yeast mixture… then the water with salt and oil. Let the mixer run until you have a smooth, elastic dough.
And here’s our dough, knead just for a few seconds to form it into a ball… then let it rise for a couple of hours in a warm place, covered with cling film or a cloth. When the dough has doubled in volume, it’s ready.
While the dough is rising, chop the walnuts, the olives and the bacon. Now take the dough, which has more than doubled, and divide into 6 equal parts, we’ll add a different ingredient to each of them; don’t forget that olives and bacon must be at room temperature.
As you can see I have 6 pieces of dough of the same weight, about 7 ½ oz (210 g) each. Now add the first ingredient, that is bacon in this case; don’t forget to save a small amount of the ingredients because, after shaping the rolls, we’ll brush them with milk and garnish on top with the same ingredients, in order to distinguish them. So, now fold it into the dough.
When all the ingredients have been folded into the dough, divide each piece into balls of about 1 ½ oz (40 g) each… and place on a baking sheet lined with baking paper. Then let the rolls rise until doubled in volume.
When the rolls are risen, brush the surface with lukewarm milk and garnish with the corresponding ingredients, that is bacon, rosemary, olives, sesame, and so on. Then bake the rolls at 350°-390°F (180°-200°C) for at least 20-25 minutes.

For the dough I used:
• 5 ½ cups (750 g) bread flour
• 1 2/3 cups (400 ml) water
• 4 ¾ tbsp (70 ml) extra virgin olive oil
• less than 1 oz (25 g) fresh yeast
• 1 tsp malt
• 1 1/5 tbsp (22 g) salt For stuffing
• 2 ¼ tbsp (20 g) poppy seeds
• 2 ¼ tbsp (20 g) sesame seeds
• ½ cup (60 g) walnuts
• 3 sprigs of rosemary
• 2 oz (60 g) green pitted olives
• 3,5 oz (100 g) diced bacon
• milk for brushing
