DOUBLE CHOCOLATE MUG CAKE FOR 2!! LOW CARB VALENTINE’S DAY DESSERT RECIPE!

Today I am sharing a go to dessert that is low carb and keto friendly that is perfect for sharing with your sweetheart for Valentine’s Day or any day! This mug cake could not be simpler! Starts with almond flour and some no calorie sweetener. I am using erythritol but you could also use a stevia sweetener if you like or a combination of the two. Mix this up with some cocoa powder and butter, cream, vanilla and eggs and you are almost there.

I am adding a pinch of salt because everything sweet needs a little bit of salt as well as a sprinkling of sugar free chocolate chips for an extra moist and delicious fudgy cake. This all gets mixed up and poured into two mugs or ramekins. I like to use 1 cup ramekins for this and then it is baked in the microwave.

Depending on the wattage of your microwave this cake is going to take anywhere from one to two minutes to bake. I bake them together and as long as it takes so that the top is no longer wet and the cake passes the toothpick test.

While the cake is baking you will see it bubble and rise and fall and rise and fall and at times it will look like it is going to come out of the container you are baking it in. Fear not, this will all come out in the end. When the cake is done remove it from the microwave and allow it to cool slightly before serving.

As an option yo can make a glaze with a couple tablespoons of sweetener and some cocoa powder blended together with a bit of heavy cream. This can be drizzled over the warm cake. You can top this all off with some unsweetened whipped cream or whipped cream that has been sweetened with some erithritol or stevia or do like I did and sweeten your whipped cream with some sugar free vanilla Torani syrup. Delicious!
