Fried Chicken Breast (Latvian)

This is a basic fried chicken breast recipe, one you’ll reach for again and again. Fried chicken is popular because it’s tasty and it can be eaten both freshly cooked or cold as a picnic food or cold-plate snack. Otbivnaya is a Russian tenderized steak. Otbivni is what we Latvians call them. This recipe comes from my Babushka who is very talented in the kitchen. You can also use chicken breast, pork, or steak, but the tenderizing/ hammering process is streamlined when you use chicken tenders. It’s highly likely that everyone will want to eat the chicken at the family table, so it’s a sure-fire winner for mealtime

For this recipe you will need:
2 chicken breasts about 500 gr
6 Medium potatoes
3 eggs
3tbsp of flour
3 tbsp of mayonnaise
4 Gherkins or pickles
Sour cream
Salt & Pepper

To make this yummy fried chicken dish you will need to do the following:
Step 1 : Make the sauce. Mix eggs, mayo, flour and salt, pepper in a bowl.
Step 2 : Peel the potatoes and cut them into thin strips.
Step 3: Start flying potatoes in the frying pan on medium heat, season per taste.
Step 4: Cut your chicken in half, so it makes 4 pieces, you can also cut it in smaller pieces.
Step 5 : Put the chicken into plastic bag and beat it up with a rolling pin from both sides to flatted them out.
Step 6 : Dip the chicken into the mixture and place it in the hot frying pan.
Step 7 : Fry the chicken on both sides for about 5 min, but don’t overcook, as meat is very thin and you want to keep it juicy.
Step 8 : Keep checking potatoes and turning them around, if you want them extra crispy, fry them for longer. Serve chicken with potatoes, gherkins and sour cream.
