For cookies:
150g almond flour
140g confectioner’s sugar
10g freeze dried fruit powder, any type of fruit (can be omitted, adjust confectioner’s sugar to 150g)
110g egg whites, at room temperature, divided
120g white granulated sugar
40g sparkling wine
1/8 teaspoon icing color, if desired
For Filling:
1 ½ cups butter, at room temperature
5 tablespoons sparkling wine
¼ cup peach preserves
3 cups confectioner’s sugar
Gold/Silver pearl dust
