Goodness from the Garden! Homemade Pesto: Noreen’s Kitchen

Greetings! We worked out in the garden and got that garlic planted. I have a ton of basil that I don’t want going to waste, so I picked a bunch and I am going to make some lovely pesto with it. Using some ingredients that I always have on hand. Parmesan cheese, freshly ground, walnuts and olive oil from food storage and basil from the garden along with a large amount of fresh garlic that I always have on hand as well as several heads from the almost blooming garlic chives in the garden.

This basil is super quick to throw together and you only need a little bit to dress a big amount of pasta for a great side dish. You can also mix a tablespoon with about 1/2 cup of mayo and get a wonderful pesto mayonnaise! You can spread it straight on a sandwich or add it to some sour cream for a great veggie dip. You can do so many things with pesto.

No matter what you choose, when you finish mixing up a batch, don’t forget to float a layer of olive oil on top so that your pesto doesn’t get dark and funky looking. Just mix it in when you are ready to use it and when you get ready to the unused portion back in the fridge, just add a little more oil and you’re good to go.
