Today I am sharing a super simple way to share a cool treat for the 4th of July! Graham cracker ice cream sandwiches are a simple way to customize an ice cream treat for your party or celebration this summer. We are making them three ways with some of our favorite flavors but you can make these the way you love best! Let your imagination go wild! Nothing beats an ice cream treat on the lawn on the 4th of July pre fireworks! These are things magical memories are made of!
These begin with ice cream and graham crackers. while this is not necessarily a recipe, it is a way to make something special without a lot of work and I am all for that! This is not cooked but put together. I am also all about that! Taking help from the grocery store can be an amazing thing when you know how to put things together just the right way. In this case, several different varieties of graham crackers and ice cream along with some toppings make for very unique and customizable treats that will be all yours to share!
I am using HoneyMaid graham crackers in the chocolate, cinnamon sugar and “S’Mores Squares” versions. We decided to make our sandwiches in squares. The original came in squares already so the chocolate and cinnamon sugar crackers were gently broken in half to create the outside of the sandwiches.
In advance of building the ice cream sandwiches, I softened the ice cream on the counter until it was not melted, but spreadable. This only took about 20 minutes in my warm kitchen. Then I laid parchment paper into a foil pan and spread ice cream into half of it. Spreading evenly across and being sure to mash it up against the side and away from the center. Then I folded the remaining piece of parchment over the top of the ice cream and smoothed everything down. Then I did the other side with another flavor of ice cream. You, of course can do the entire pan with one flavor, I only wanted to make half because we are only four people and I will most likely be needing to share some of these with friends. Just to give you an idea, I used about 2/3 of a container of ice cream for each slab. We used Breyer’s ice cream in cookies and cream, salted caramel, and strawberry New York cheesecake flavors. You can use what you enjoy best!
I allowed the ice cream slabs ample time to set in the freezer before cutting and creating the sandwiches. These were in the freezer for about 4 hours. Overnight would be best. Using the parchment is a really great recommendation for easy of preparation. When I got ready I sized up with a cracker and used a sharp knife to cut the ice cream and then gently sandwich between two crackers.
For the cookies and cream version we, obviously used cookies and cream ice cream and chocolate graham crackers. For some of the sandwiches we drizzled chocolate syrup on one side before topping with the cracker. When this froze it became like a chocolate swirl layer in the sandwich. Delicious!
For the Dulce De Leche ice cream sandwich we used salted caramel swirl ice cream and cinnamon sugar graham crackers. For some of these we spread a thin layer of Lechera or Caramelized sweetened condensed milk on one side of the graham cracker before sandwiching the ice cream inside. You can also sprinkle with a bit of finishing salt if you like.
For the cheesecake sandwiches we used New York Strawberry cheese cake ice cream and traditional graham crackers. We left these simple. Next time, however I am going to grind up some graham crackers with some freeze dried strawberries and roll the sides in that mixture for a tart and crunchy coating like those strawberry shortcake ice cream pops!
You can choose to roll the sides of your sandwiches in crushed cookies, more crushed crackers, toasted coconut, chopped and roasted nuts or anything you love with your ice cream!
Serve as is right from the tray and out of the freezer or put large popsicle sticks in them for the kids to enjoy on the lawn. You can also set up an ice cream sandwich sundae bar with toppings and whipped cream. Don’t forget the spoons for a seriously decadent treat on a warm summer night!
