Greek Bougatsa

Bougatsa is little parcels of filo pastry wrapped around ricotta cheese flavoured with cinnamon and lemon.

Ingredients:
Filo pastry
500g ricotta cheese,
(low fat)
2 tbsp cream
2 tbsp plain flour
Cinnamon
Lemon rind (optional)
1/2 cup of sugar

Serves 8

Method:
Combine all ingredients with a fork or blender. Butter or oil your filo pastry sheet, both sides.

Repeat this method with every sheet.

You require 2 sheets per parcel. Fill with cheese mixture and fold pastry into parcel.

Heat the oven to 190c — 200c and cook the parcels for ten minutes. Then lower heat and cook until you get a nice golden colour.

Sprinkle with sugar and cinnamon.

Serve warm.
