I discovered this recipe while on a trip to the Dominican Republic. I hope you enjoy it as much as I did. 😉
Guandules (Dominican Dish)
Ingredients:
1 bag of gandules “pigeon peas”
1 smoked ham chop
2 cups of chicken stock
1 shallot
1 red pepper
1 tomato
4 cloves of garlic
Olive oil
2 tablespoons of Goya sofrito
Directions:
1. Boil gandules in water with a teaspoon of olive oil.
2. Pan fry one smoked ham chop until golden brown on both sides, add to beans.
3. Chop up one shallot and red pepper and sauté in oil from ham chop,
4. Once shallot is translucent add garlic and sauté.
5. Add mixture to beans.
6. Slice one tomato in half and add to beans.
7. Add ½ cup of white wine, stir and allow to cook for 2 to 3 hours on low.
