Today I am sharing with you how to make some amazing deep fried chicken wings that are crispy, crunchy and smothered in a delicious, cheesy buffalo sauce. Perfect Super Bowl snacking fare. The best part is that these are actually low carb and keto friendly! I have used my homemade keto friendly cheese sauce to make the wing sauce along with some other awesome ingredients that will make you and your friends so happy! These wings start off like most others. I have a family size tray of chicken wings. I like to buy them fresh and whole and then cut them up myself. I cut the tips off and cut each wing into the drumette and flat portion. Save the tips and freeze them for the next time you make chicken stock!
The secret here to a crispy wing is oat fiber! I have been doing a lot of research into what is keto friendly and low carb. Obviously I cannot make these wings with corn starch which is what I usually use. I dredge the wings with corn starch and toss into a hot fryer. But since we are eating lower carb, we are trying to find other options. The oat fiber is like a magical ingredient. It has 3 carbs per serving but also has 3 grams of fiber per serving making this 0 net carbs overall. I decided to give this a try and dredge my wings in the oat fiber prior to frying. It was amazing!
You do have options with regard to the wing preparation. You can use oat fiber like I have or you can dredge your wings in an unflavored protein powder. You can also fry them without coating in anything. The reason I like to dredge the wings is so you get better coating when you cover them in your preferred sauce at the end.
I prepared with wings with the oat fiber and tossed them into a 375 degree deep fryer for 12 minutes. I did mine in two batches because you don’t want to crowd the basket and you want to make sure your oil does not get too cool while cooking. This can take much longer to fry and then you can also end up with greasy wings!
I made the coating sauce for the wings by mixing together 1 cup of Frank’s hot sauce which has zero carbs along with approximately 3/4 cup of my homemade keto friendly cheese sauce. I whisked this together to make a cheesy buffalo sauce that is amazing! So basically, we are replacing the melted butter from traditional buffalo wings with the cheese sauce which has zero carbs as well. So in the end we have a zero carb cheesy buffalo chicken wing.
These were simply delicious! So satisfying and you will never feel deprived when making your wings this way. I also did half of these wings with G. Hughes sugar free honey bbq sauce and they were also delicious. You can make whatever sauce you like. The way to make the wings remains the same.
