Spiced with chili, cinnamon and cayenne this chocolate cupcake recipe has a warm and unexpected zip your Valentine will adore! And, they are topped with a from-scratch, creamy and delicious Fudge Icing… Pretty much the best chocolate frosting ever made…. just saying! Give these cupcakes a try, this Valentine’s Day… or any day!!
Cupcake Ingredients:
-1 3/4 Cup All Purpose Flour
-3/4 Cup Cocoa Powder (I used Hershey’s Special Dark)
-1 1/2 tsp Baking Powder
-1 Tbsp Cinnamon
-2 Tbsp Chili Powder
-1/4 to 1/2 tsp Cayenne Pepper (more or less depending on how spicy you like it!)
-1 tsp Salt
-1 Cup Half & Half (room temp)
-3/4 Cup Strong Coffee
-1 tsp Vanilla Extract
-1 1/2 Sticks Unsalted Butter (softened)
-2 Cups Granulated Sugar
-4 Eggs (room temp)
Fudge Icing Ingredients:
-2 1/2 Sticks Unsalted Butter (softened)
-1 1/2 Cups Powdered Sugar
-3/4 Cup Cocoa Powder (I used Hershey’s Special Dark)
-a pinch of salt
-3/4 Cup Light Corn Syrup
-2 tsp Vanilla
-1 Cup Milk Chocolate Chips (go ahead and use semi-sweet or dark chocolate if you like!)
*These recipes make enough to bake and ice 24 cupcakes.
