Breakfast Burrito Recipe
Ingredients for 2 burritos
3 large eggs
⅓ cup yellow onion, finely diced
½ red organic bell pepper, super fine dice
¼ tsp Garlic powder
Salt and pepper to taste
4 slices bacon, cooked and crumbled
2 large flour tortillas, use Siete brand if gluten free
Sour cream
1 cup or more of cheddar cheese, grated
1 large sweet potato, or enough to cover a baking sheet in a single layer when cut into bite size pieces.
2 Tbsp. coconut sugar
1 tsp. Garlic powder
¾ tsp. Onion powder
1 tsp. Ground chipotle pepper
2 tbsp. Olive oil
2 tbsp. Butter, melted
¾ tsp salt
¼ tsp. Pepper
Directions:
Preheat oven to 400 degree F.
Melt the butter in a medium size bowl and add the olive oil. Stir to combine. Add the cut up sweet potato and toss to coat. Pour the potatoes onto a baking sheet lined with parchment paper. Spread the potatoes so they are in a single layer.
In a smaller bowl combine the chipotle pepper, coconut sugar, garlic powder, onion powder, salt and pepper. Stir to combine. Sprinkle half of this mixture over the potatoes. Then turn the potatoes over with a spatula and sprinkle the rest of the spices over the second side.
Place the potatoes in the oven to roast until golden brown and fork tender. You can turn them over after 25 minutes and continue to cook for 10 minutes longer. Remove from the oven, and keep warm.
While the potatoes are roasting, begin cooking the bacon. Place a large frying pan over medium heat. Lay the bacon in the pan and turn the pieces over every minute or two. Cook until golden brown. Place the bacon on a towel covered plate to absorb excess grease.
Pour out most all the bacon grease and add a teaspoon or two of olive oil to the pan over medium heat. Place the bell pepper and onion in the pan and saute for 5 minutes stirring regularly. Scramble the eggs with a whisk and add a pinch of salt and a sprinkle of garlic powder. Whisk again. Then pour the eggs in with the onion and bell pepper and scramble the eggs. Heat tortillas in a tortilla oven like I did in the video. If you don’t have one you can heat the tortillas in a large fry pan over medium low heat, toss until warm.
To assemble burritos: take a hot tortilla and place some sweet potatoes across the middle of the tortilla. Do not fill all the way to the ends. Add a layer of sour cream on top. Then add the scrambled egg layer followed by the bacon and then cheese.
Roll by tucking in the sides first and then roll to close seam side down. Heat a clean frying pan over medium heat. Add 2 tsp. Of butter and once melted add the burritos seam side down in the pan. When the bottom is a golden brown, carefully turn the burrito over to brown the top. Serve immediately.
