Crunchy on the outside and gooey in the middle. I show you how to make these delicious little cookies step by step. They can be a bit fiddly, but they are well worth it. I say practice, practice, practice.
Ingredients: (makes about 30 macarons, depending on size you make them)
1 cup of icing sugar
3/4 cup of almond flour (almond meal)
2 large egg whites (or 3 small/medium eggs)
1/4 cup of castor sugar
1/3 teaspoon of cream of tartar
1/2 teaspoon of vanilla extract
food colouring
Bake for about 10-12 mins at 160 degrees celsius on the bottom or top rack. Do not make these on a humid day, you need cooler weather so they don’t flop! Make sure you pipe them on a tray lined with baking paper. Turn the rack half way through the cooking time. Be careful not to add too much colouring as sometimes it can affect the consistency.
