Greek Lemon Potatoes Recipe.
3 medium potatoes,Cut in Half.
1/2 cup lemon juice
Add 1/3 cup vegetable or canola oil.
1 tbsp olive oil
1 1/2 tsp dried oregano
Wash and cut the potatoes in half.
Toss to coat. Place the potatoes in a deep flat pan.Add 3 cups water.
Bake uncovered at 425 degrees for 1 1/2 hours,
stirring occasionally.
Water evaporates in the last 30 minutes,Until only oil is left.
Stir more frequently during this time to prevent browning. Garnish with fresh parsley if desired.
