Forget the boring cake and ice cream — surprise your guests with these cupcakes that are a delicious 2-in-1 treat.
Step 1: Create cupcake shells
Place cupcake liners individually on a baking sheet that fits in your freezer.
Tip
You can use silicone cupcake liners instead of foil and paper ones.
Step 2: Melt chocolate chips and create shell
Melt the chocolate chips over low heat, stirring constantly to avoid burning. Paint the liquid chocolate on the liner with the pasty brush, and don’t skimp or your cupcake may crack. Put the chocolate shell in the freezer to set.
Step 3: Bake cupcakes
Using a separate set of cupcake liners or a muffin pan, bake a batch of cupcakes according to your cake mix’s instructions. Allow them to cool completely.
Step 4: Remove and cut the cupcakes
Take the cupcakes out of their liners. Cut each cupcake in half, so that the top and bottom are separated. Using a knife, cut a circle out of the middle of the top half of the cupcake.
Step 5: Assemble
Take your chocolate cupcake shells and the ice cream out of the freezer. Allow the ice cream to soften while you place the cupcake bottom halves on the bottom of each chocolate shell. Add a small scoop of ice cream to each, and cover with the cupcake top halves. Return them to the freezer to set.
Step 6: Decorate and enjoy
Let your kids or party guests join in the fun by having them decorate their own with a swirl of whipped cream, frosting, colored sugar, and sprinkles. Take the outside liner off, dig in with a spoon, and enjoy this new party favorite.
