How to make Meatballs (Kotlets)

How to make Meatballs at home. This is traditional Russian dish for meat lovers. This recipe serves 4 people and makes about 12 Kotlets. Have you ever tried Russian Cutlets? It could be your next quick delicious dinner. Russian cutlets are very easy to make and are absolutely delicious! You can make as many as you like and just keep the rest in your fridge for tomorrow. The leftovers are as yummy as fresh ones. Russian cutlets or kotleti might remind you of burger patties or meat balls, they are, after all are made out of ground beef. However, their shape is different than meat balls or patties, and because Russians love rich flavor in their food, kotleti might contain more then just ground meat and spices. This is my childhood grandmas recipes but there are so many different variations of Russian kotleti nowadays.

Ingredients:
500 gr of minced beef ( you can also use 250gr of beef and 250gr of pork)
1 large onion
3-4 cloves of garlic
Salt & Pepper
1 Tbsp of sour cream ( optional)
1 egg
1 piece of white bread soaked in a little bit of milk without the crust ( optional)

For the creamy mash you need:
50 gr of butter
6 medium potatoes
150 ml of milk
Salt & Pepper
Pinch of nutmeg (optional)

Directions:
Step 1 : Peel and chop onion with garlic finely.
Step 2 : Cut minced meat into stripes
Step 3 : Fry the onions first then add garlic and cook for about 3-5 min, add a pinch of salt and pepper
Step 4 : Add minced meat into the bowl. Then add 1 egg, 1 table spoon of sour cream, salt & pepper, fried onions and garlic. Mix it all really well incorporating all the ingredients.
Step 5 : Create round shapes out of the mixture and place them on a chopping board or a plate
Step 6 : Add a bit of oil or butter into your pan, set on medium heat. Fry as many Kotlets as you can fit in a pan for about 3-5 min, then turn them around and fry again for another 3-5 min until they are done inside.
Step 7 : Just before they are done, add a bit of water into frying pan and cover the lid, this will make Kotlets more juicy. ( Again this is optional)
Step 8 : Check one Kotlet to make sure meat has cooked properly, especially if you are using pork ( fry it longer) and serve with pasta, potatoes or rice. Always add some garnish from fresh vegetables to make it more colorful and yummy

To make the Mash you will need to do the following:
Step 1 : Boil your potatoes ( cut them into smaller pieces to boil faster)
Step 2 : Pour away the water and mash the potatoes
Step 3 : Add butter, salt and pepper, mix that in
Step 4 : Slowly add milk ( make sure milk is either room temperature or warm) and mix.
Step 5 : Serve on a plate with a tiny bit of butter on top.
