I bet many of you have never tasted cottage cheese pancakes. Those pancakes are an instant reminder of my childhood. Pancakes filled with sweet cottage cheese can make a light dessert or a perfect breakfast meal. These pancakes with that sweet cheese filling are perfect as a lunch or for an afternoon treat. You might thinking of serving them as an alternative to a dessert, but if you’re doing so after a dinner one pancake will be plenty! They are quite filling. Serve with honey, jam, or sour cream. This recipe makes 10 delicious cottage cheese pancakes. You can also freeze them for later use!
For this recipe we will need:
Plain pancakes:
300 gr of flour
500 ml of milk
2 eggs
40 gr of sugar
For the cottage cheese filling we will need:
500 gr of cottage cheese or farm cheese
100 gr of raisins (optional)
1 tsp of vanilla extract
2 tbs of sugar ( optional)
To make these yummy Russian style pancakes with cottage cheese you will need to do the following:
Step 1 : First we make basic pancakes. Mix flour, milk, eggs & sugar together ( If you have a blender, use that, will be much quicker)
Step 2 : Fry pancakes lightly one by one and place them on a plate to cool down
Step 3: Make the cottage cheese filling. Mix cottage cheese with raisins, vanilla extract and sugar.
Step 4 : Spoon the mixture ( about 2 tbs ) into each pancake, and fold together from both sides.
Step 5 : Fry them until golden brown on a frying pan to serve or store them in a freezer for the future.
