In this video Chef Davy Devaux shows you how to make a delicious little garnish made of soft cucumber slices, this simple little recipe can be used on top of sushi roll pieces or just as a separate garnish next to any classic Japanese food.
It is a very easy recipe how to pickle cucumbers and it goes like this:
Cut your cucumber in to a 15 cm (7 inches) piece then slice in to very thing sheets lengthwise, once cut mix together (1 tbs rice vinegar, 1 tbs sugar and 1/2 ts salt) add the cucumber slices and leave to pickle for 20 to 30 minutes.
once done just remove any liquids and shape the pickled cucumber in to what ever shape you desire.
