Well, it’s no secret, I love dessert! One of my favorite all-time desserts is a strawberry cake recipe. This was something I tried as a child and I mentioned that to my grandmother, who taught me everything I know about baking and she told me, you know what? I think I have that recipe in my recipe box. From the files of my Grandma Metzger, I’m going to share one of my all-time favorite strawberry cake recipes. I love this recipe! It starts with a cake mix. So, we’re going to add some ingredients to give it some more moisture and flavor, but it’s beautifully pink and really pretty as a birthday cake, or today we’re going to make them as cupcakes. Well, our strawberry cupcakes are just about finished, so I want to get started on the frosting we will use and it includes a simple strawberry syrup. This is something you can use not as just an added ingredient to your frostings, but it’s nice to keep on hand in your refrigerator. I love to add it as a sweetener to my iced tea, you can use it for a salad dressing or a lot of different things when you need that kick of flavor, it’s a really nice tool to have. So now it’s time to make the strawberry butter cream frosting for our strawberry cupcakes. And we’ll take this frosting and you can either go directly from the bowl with some kind of a spatula and freehand your frosting for your cupcakes. I like to usually use a pastry bag. I think it gives a little more of a bakery finish. So, we’ve already loaded our icing into the pastry bag like this and I’m just using a simple round tip. Something very easy to use especially if you’re a beginner with cake decorating. So, here is our strawberry and this is just going to give you a nice, even spread of that buttercream frosting. I just sort of spiral it. Finish it on top, and then I like to take a little dab of a fresh strawberry. Kind of just fanned out just a little bit for the top.
