In this video tutorial Chef Davy Devaux shows you how to make sushi garnish using cucumber. You can carve this using different vegetables too like: gherkins, eggplant, dehydrated carrot..ect. The one important thing you will need to make this is a very sharp thin knife like the Miyabi knife used in the video.
How to carve the cucumber in to beautiful sushi garnish?
The technique is very simple, you cut a very small “V” shape in to the cucumber. Then you push that piece up a little, after pushing it up you cut another “V” shape underneath the original “V” shape and push that up. Repeat the process until the cucumber leaf design is big enough. Then make another mirroring the original, once both are done trim down the excess cucumber.
